Ingredients:

- 2 tsp olive oil

- 2 cloves garlic (chopped)

- 1-inch ginger (chopped)

- 2 tbsp spring onion (chopped)

- ½ onion (finely chopped)

- ¾ cup oats

- 2 cups mixed vegetables (such as carrots, beans, capsicum, and tomatoes)

- 4 cups water

- ½ tsp salt

- ½ tsp pepper powder

- 1 tsp mixed herbs

- Juice of ½ lemon

- 2 tbsp spring onion (for garnish)


Instructions:

1. Heat 2 tsp of olive oil in a large kadai. Add chopped garlic, ginger, and spring onion. Sauté slightly.

2. Next, add finely chopped onion and sauté until the onions shrink slightly.

3. Add ¾ cup of oats and sauté for a minute. This helps to prevent the oats from becoming sticky.

4. Then, add 2 cups of mixed vegetables, 4 cups of water, and ½ tsp of salt. Mix well and boil for 10 minutes until the oats are cooked through.

5. Add ½ tsp of pepper powder, 1 tsp of mixed herbs, the juice of half a lemon, and 2 tbsp of spring onion. Mix well.

6. Optional: Add a pat of butter for taste.
